What is bajra atta?
Bajra atta is flour made from pearl millet (Pennisetum glaucum), the small grey-green grain grown across the drier belts of Punjab, Sindh and Thar. In Pakistani homes it is best known as the flour behind bajre ki roti: a thick, nutty, slightly earthy flatbread eaten with makhan, saag, gur or lassi when the weather turns cold.

Bajra atta handles differently from wheat atta
Without gluten, bajra dough does not stretch. It is short and crumbly, and it cracks if you try to roll it like a chapati. That is normal, not a quality problem. Knead with warm water, work one small portion at a time and pat the roti by hand or on a damp cloth. The full method is in the Bajre ki roti guide tab. If you prefer a softer roti that rolls easily, mix bajra atta with wheat atta; the mixed roti will no longer be gluten-free.

Two things stand out when you compare bajra with wheat: pearl millet carries more fat (mostly in the germ) and a good amount of fibre. The higher oil content is also the reason bajra flour has a shorter shelf life; see the Freshness & storage tab.

How to make soft bajre ki roti
Bajra has no gluten, so the dough behaves differently. Start with a small batch and adjust the water to the flour; this is a preparation guide, not a claim of a tested recipe yield.
- Use warm water. Take about one cup of bajra atta for two medium rotis. Add warm (not boiling) water a little at a time and mix with your fingers.
- Knead with the heel of your palm. Rub and press the dough for 3–4 minutes until it feels smooth and holds together. Bajra dough will never feel stretchy like wheat dough.
- Make one roti at a time. Knead only enough for one or two rotis. Bajra dough dries and cracks if it sits for long, so do not rest it for 20 minutes like wheat.
- Pat, don’t roll. Wet your palms and pat a ball into a round between your hands, or press it out on a damp cotton cloth or a sheet of plastic. Aim for a thickness of about 5 mm.
- Cook on a medium-hot tawa. Carefully place the roti on the tawa. Cook until the underside firms up and develops brown spots, then turn with a spatula. Keep your fingers clear of the hot surface.
- Cook through on both sides. Turn as needed and gently press thicker areas with a spatula. Keep the heat moderate so the centre cooks before the outside burns.
- Serve hot. Spread desi ghee or makhan. Bajra roti hardens as it cools, so keep cooked rotis wrapped in a cloth inside a roti box.
If the roti cracks or breaks
- Knead longer and add a few drops of warm water; cracks usually mean the dough is too dry.
- Make the roti smaller and slightly thicker until you are used to handling it.
- Mix 25–50% wheat atta into the bajra atta for an easier dough. The roti will then contain gluten.
More ways to use bajra atta
- Choori / malida: crumble a hot bajra roti, mix in desi ghee and shakkar or gur, and press into small balls — a Punjabi winter favourite.
- Bajra cheela: whisk the flour with water, yogurt, chopped onion, green chilli and salt into a batter and cook thin pancakes on a greased tawa.
- Mixed atta roti: replace part of your usual wheat atta with bajra atta for everyday chapati.
- Methi or palak bajra roti: knead finely chopped methi or spinach, salt and ajwain into the dough.
- Gluten-free baking: use bajra atta in cookies, naan khatai or flatbreads. Combine it with a binder such as ispaghol (psyllium husk) for better structure.

Bajra atta or multigrain atta?
Choose bajra atta when you want a single, wheat-free grain and are happy to cook it the traditional way. Choose a multigrain flour blend when you want roti that behaves like normal chapati but has more grains in it. Our multigrain blends contain wheat, so they are not an option for anyone avoiding gluten.
Bajra atta or brown rice flour?
Both are single-grain, naturally gluten-free flours. Bajra has a stronger, nuttier taste and is the classic choice for thick winter roti. Keep bajra atta fresh
Whole pearl millet contains natural oils. After milling, heat, humidity and air can shorten freshness, so keep the flour sealed and buy a quantity that fits your cooking routine.
- After opening, use a clean, dry, airtight container.
- Keep away from sunlight, steam and the stove; use a dry spoon.
- In hot or humid weather, refrigerate in a well-sealed container. Let the portion you need reach room temperature while covered.
